Mercenaries are more expensive than regular units and should not be kept in your garrison unless you just have surplus income or really can't get any other troops. Nords have the best infantry in the game with their huscarls that can also carry throwing weapons making them even more effective.
Their archers are also solid. To defend your castle I'd keep a mix of archers and infantry. Don't waste expensive horses or mercs on your garrison when you're just starting out. I like to go heavy on the archers. I would go work for a king somewhere (probably the guy killing the nords because they're about to have some free land) and become a vassel until they give you some land of your own.

That way you won't have to worry about the size of your garrison as much because the rest of the kingdom will defend you. It's not my favorite way of playing the game but it's probably an easier way of starting out than trying to start your own kingdom immediately.
